Look what I cooked! - Easy Peasy Fish Tacos
One of my new year resolutions was to start a vlog. But then I thought about making little videos of the food I cook. I am not the one who takes forever to cook, I am fast. Friends love my food 🥘 and my fam is my FAN....
Today hubby called from the office at around 2o’clock, “I am meeting one of my school friends for dinner at @Rasika. He is visiting from India”. Now the question was what to cook for ourselves, my daughters and I. There was a lied to we fish fillet in the fridge and tortilla pack from @costco. So we decided on Fish Tacos. Girls prepared the toppings - salsa, spicy sour cream (sour cream + a tsp of Sriracha), 🍅 tomatoes, cilantro, Mexican cheese and shredded cabbage massaged with dash of salt and plive oil. While I prepared the batter, real simple because I like no fuss.
Batter- 1/2 cup of Panko breadcrumbs + 3/4 cup of all purpose flour + 3 cloves of garlic (mashed into paste) +1 tbsp of grated ginger+salt and red pepper according to the taste. Mix it with water till it forms a paste like consistency. Dip the pieces of fish in it, cover it properly and fry till golden brown.
